While I’m standing in the kitchen, longing for a glass of whiskey. Do I wonder if there are actually dishes with whiskey? You would think that because of the different taste profiles of whiskey, it fits well in dishes. For this I have searched for different dishes and share them with you to still enjoy whiskey for a reasonable time!
Dishes with whiskey do exist. It varies from sweet to savory and from smoky salmon to fried chicken breast. Even desserts are possible with whiskey, enough choice! The trick is to distinguish the flavors and ask yourself the question: Which whiskey is needed for which dish?
Not every dish is suitable for a dash of whiskey, but the dishes that do lend themselves to it form a magical combo. Recipes with an extreme amount of flavors can usually not be combined with whiskey. The same goes for recipes that contain a lot of garlic. Whiskey combines better with fat than with acid and furthermore it combines well with ingredients such as honey, whipped cream, egg white and cinnamon. Often a combination of a light whiskey with a light dish goes well together. The same goes for heavy whiskey with heavy dishes. In addition, it is important to know that combining whisky with food is not as easy as combining wine with a dish.
Unfortunately it’s not as simple with whiskey as with wine. Whisky can’t be categorized into ‘white wine’ and ‘red wine’ like the wine. In addition, the much higher alcohol content of the whiskey makes it more difficult to make dishes. But with the right whiskey and the right dish the dish will really be worth it.
I will describe a 3 course dinner with 2 choices for each course. At the main course even 3! Of course all these dishes are made together with whiskey!
First we start with the appetizer. Namely the prawns in whiskey cream sauce and the salmon carpaccio with whiskey sauce. Both starters can be made within 10 minutes. This also makes them quick and easy to make.
Shrimp in whiskey cream sauce – 4 persons

50 ml (Scottish) whiskey
The first step is to preheat the oven to 200 degrees. Next to that you butter the oven dishes. Then chop the shallots and bake them in the butter. Add the prawns (with or without tails) and bake them together with the shallots for a minute. Then add the whiskey and stir for 2 minutes. Turn down the heat and add the whipped cream and parsley. Stir and after a minute remove the pan from the heat. Season to taste with salt and pepper. Divide everything over the buttered dishes and sprinkle the cheese on top. Place the bowls in the oven for another 5 to 8 minutes until the cheese has melted well and the appetizer is ready.
Salmon cocktail with whiskey sauce – 6 to 10 persons
400 grams red salmon
1 head lettuce
2 tbsp capers
100 grams candy tomatoes
4 tbsp mayonnaise
1 tbsp ketchup
1/2 tbsp whiskey
For this appetizer, the bones and skins must first be removed from the salmon. Make the salmon small with a fork and mix it with the capers and fresh pepper. Wash the lettuce and break the leaves if they are too big. Then start the sauce, mix the mayonnaise, ketchup and whiskey together in a bowl. Stir this together until you get a smooth sauce. Now the sauce is ready you can decorate it yourself, for example put the lettuce in the glasses and put the salmon on top. To finish the cocktail, add the whiskey sauce to the appetizer and add fresh parsley and tomato.
We extend the main courses to 3 recipes where a fish dish, a chicken dish and a meat dish are explained. Something for everyone.
Salmon – 4 persons (60 minutes)
4 slices Salmon
Salt and pepper
Piece of brie or camembert
Big shot of Scotch Whisky
First preheat the oven to 150 degrees. Place each salmon steak on a piece of aluminum foil and put a dash of whiskey over it, sprinkle a little salt and pepper on top. Cut the fresh herbs small and put a little bit of these herbs on each salmon steak. Cut thin slices of the brie or camembert and put a few slices on each salmon steak. Fold the aluminum close around the salmon but not too tight. Put these packets in an oven dish or baking tray, put the oven dish or baking tray in the oven for 30 minutes. Leave it to cool and the salmon is ready with a dash of whiskey.
Chicken breast with whiskey – 4 persons (30 minutes)
400 grams chicken breast fillet
1/2 red bell pepper
1/2 green bell pepper
1/4 tin of whole mushrooms
1 pineapple slice
50 grams butter
3 tbsp whiskey
3 tbsp coffee cream
Salt and pepper
Shot of worcestershire sauce
Cut the chicken breast into strips and then sprinkle them with curry powder in half. Wash the peppers and remove the seeds and cut the peppers into strips. Drain the mushrooms and slice them and cut the pineapple into pieces. Place the frying pan on the fire and let the butter soak in. Put the chicken breast in the frying pan and wait until browned. When this happens the peppers, mushrooms and pineapple can be added. Pour the whiskey on top and light it. Now a flame is created, extinguish this flame by pouring coffee cream over it. Season to taste with salt, pepper and Worcestershire sauce. Put the lid on the pan and let it simmer for another 15 minutes or so and the chicken breast with whiskey is ready.
Steak Sandwich with entrecote and whiskey onion chutney – 2 persons (30 minutes)
Ingredients For the whiskey onion chutney For the steak sauce
2 entrecotes 3 red onions 4 tbsp mayonnaise
1 (fried) ciabatta 2 cloves garlic 2 tbsp coarse mustard
Musterd a shot of whiskey 1 tbsp of whisky
Big hand of arugula 2 tbsp of brown sugar tabasco chipotle sauce
Olive oil 2 tbsp balsamic vinegar lemon juice Butter snuff paprika powder pepper en salt

This is one of my personal favorites. First you start with the preparation of the onion chutney. Put a saucepan on the fire with a dash of olive oil in it. Then cut the red onion into half rings and fry this briefly. After this add 2 pressed cloves of garlic and fry these as well for a short time. Add a dash of whiskey to the mixture and simmer for a few minutes. Then add the brown sugar, balsamic vinegar and a pinch of paprika powder and stir well. Then let it simmer for about 15 minutes so that most of the moisture evaporates. Let the mixture cool down a bit and put it ready for later use.
For the sauce is actually a mixture of all the ingredients that go with the steak sauce. Once it’s mixed you can feel free to see if you need some more spice. For this you can add extra chipotle. Set the sauce aside, we’ll use it for later.
Now that the onion chutney and the sauce are ready we will start with the steak sandwich. Make sure the entrecotes are at room temperature. Dab them dry with kitchen paper and sprinkle with coarse sea salt and black pepper. Let it soak for about fifteen minutes before baking them generously.
Place a frying pan on the fire and let it heat up well. Add a dash of olive oil and melt a knob of butter in the pan. Then fry the entrecotes on high heat for 2-3 minutes. Lower the heat and fry the entrecotes to the desired doneness. The baking time depends on the thickness of your entrecotes. Remove the entrecotes from the pan and let them rest for a while before cutting them. In the meantime we can start with the sandwich. Cut the ciabatta in half and then cut it in half lengthwise. Lightly brush the ciabatta with olive oil and then fry them crispy in a grill pan. Then grease both sides with the steak sauce and put some rocket on top. Put the sliced sirloin steak on top and put the onion chutney and some more steak sauce on top. Put the top on top and your delicious steak sandwich is ready!
Irish Coffee cheesecake in a glass – 6 people (3 hours)
120 grams Café Noir Cappuccino coffee cookies
250 ml whipped cream
100 grams of sugar
1 bag of vanilla sugar
3 to 4 sticks instant coffee mocha
A dash of Irish Whiskey
350 grams cream cheese (possibly light)
1 box of chocolate coffee beans
Als eerst plet je de koekjes (niet te fijn). Vervolgens verdeel je de koekjeskruimels in 6 glazen. Klop de slagroom met de suiker, vanille, koffiepoeder mokka en een scheut whiskey stijf. Voeg dan de roomkaas toe en meng het door elkaar. Proef het mengsel tijdens het mixen, voel zelf aan of er nog meer whiskey bij kan of eventueel meer mokka. Wanneer het mengsel voldoet aan de wensen kun je het mengsel verdelen in de 6 glazen. Plaats vervolgens de glazen minimaal 3 uur in de koelkast om op te stijven. Strooi voor het serveren wat koffiepoeder en wat koffiebonen over de cheesecake voor de finishing touch.
Chocolate whiskey mousse – 4 persons (1 hour)
180 grams chocolate
25 grams of butter
25 grams cane sugar
3 tbsp smoky whiskey
Two of our favorite ingredients can be perfectly combined: chocolate and whiskey! First use a knife to chop the chocolate. Then cut the butter into cubes. Mix the chocolate, butter and whiskey together in a deep bowl and melt au bain-marie. After it has melted well take it off the fire and let it cool down.
Separate the egg whites and beat the egg whites to snow. Now add the sugar and mix it together for 1 minute. Lightly whisk 1 yolk and pour this into the chocolate mixture. Add two tablespoons of egg white to the chocolate mixture and mix gently. Do the same with the remaining egg whites. Put the chocolate cream in a piping bag with a serrated edge and spray it into the glasses. Leave it to cool for about 1 hour after which you can serve it.
Enough choice for dishes in the different courses with whiskey. After dinner there can always be a tasty cocktail mixed with whiskey but more about this in a following blog!
